Potato Pancake. As a change from the endless waiting, here's a picture of the potato pancake I made for dinner. The sun actually spilled across the stove this evening while I was cooking, but the other pictures had a light splash because it was so bright. I waited to get this picture for a couple of minutes while the pancake was cooking.

I generally hated potato pancakes growing up, but that one is enough to make me try them again!

The recipe is simple: peel and grate 4 potatoes into a bowl. Beat 2 eggs and pour them over the grated potatoes. Add either a small onion, diced small, or a couple of shallots, diced small. [You can also grate the onion, but you need to be of pretty stern stuff to survive that.] For this one, I chopped some rosemary; you can also grate nutmeg if you prefer. Add some salt and pepper, and stir everything.

Preheat a cast iron skillet, preferably of a size that you have two of; this was a 10" skillet. Put in some oil (olive is good, but anything will do), then pour the potatoes in and press and level them. Put a second skillet upside down over the first as a lid. Cook for a little while, about 10 minutes or so, depending on how hot your skillet is.

Here's the tricky part: Remove the second skillet, and heat it on another burner. Brush with just enough oil to prevent sticking but without any drips. Put it back over the first pan, and flip the whole thing over so the pancake falls into the second skillet. Put that one on the burner, remove the original skillet, and cook till done, a bit less than 10 minutes. If you don't have a second skillet, you can do this trick with a plate and auspicious sliding back into the original skillet, or great luck and a BIG spatula.

I think you can also put the pancake in the oven to broil, just as you would a frittata. This would be much easier than the skillet-flipping!
